One of my favourite go to breakfasts during the summer are smoothie bowls. I adore them and it’s an amazing way to get loads of fruit and veggies into your diet and hit the ground running first thing in the morning.
Personally I find them really filling and I stay full for a good few hours after eating. The trick I find to make it filling is with a good choice toppings and veggies thrown in for good measure.
Berry flavours are my favourite but mixed berries have a tendency to be sour and overloaded with seeds so I choose to use individual backs of berries to pick and choose from. You can buy these from your local supermarket in the frozen section or go to the reduced shelf and look for cheaper fruit that you can just freeze yourself!
Makes 1 bowl
Use frozen fruit and vegetables
- 1/2 cup raspberries
- 1/2 cup pitted cherries
- 1/2 cup strawberries
- 1 frozen banana
- Handful of kale and spinach
- 1/2 cup rice milk or other milk of choice
- Dried and/or normal fruit
- Coconut flakes
Throw all of the fruit, veg and milk into a food processor and whizz until smooth. The trick to smoothie bowl is to use frozen fruit and veg to keep its consistency thick (like sorbet) and lovely and cold.
Tip the mixture into a bowl and top with your preferred choices. For this bowl I used granola which had seeds and dried fruit already mixed through it, dessicated coconut and some strawberries.
It’s delicious and sweet and you can’t taste the veg at all I promise. This is such a great way for people who don’t like vegetables very much to get some of those vital vitamins in their diet.
